Under
new ownership and management since July of 2007, Chimney Park
Restaurant & Bar continues to create the most memorable
dining experiences in Northern Colorado. Now headed up by
owner and chef, Jason Shaeffer, Chimney Park merges the refined
elements of fine dining with a feeling of accessibility and simplicity.
The staff, cuisine, wine and service are the benchmarks in this
foundation for creating hospitable and memorable experiences.
Chef Shaeffer's vision is to create a dining destination in the
Windsor community and Northern Colorado.
Chimney
Park, the building itself, is a historic piece of downtown Windsor,
originally built in the late 1800's. Established as Chimney
Park Bistro in 2004, the restaurant's decor and character exudes
a welcoming warmth with exposed brick, wood floors, gentle toned
colors, historic pictures and artwork.
Chimney Park's staff prides themselves on relationships with local
producers and the ability to provide delicious dishes using only
the freshest, seasonal ingredients while giving friendly service
and a high quality dining experience.
Shaeffer
is a Virginia native and graduate of Johnson and Wales University
in 1992. Chef Shaeffer trained under 4 different recipients
of Food and Wine Top American Chefs, Trey Foshee, George's
at the Cove, La Jolla CA, Terrance Brennan, Picholine
and Artisanal, NYC, Thomas Keller and Jonathan Benno, Per
Se, NYC.
Shaeffer
was an opening sous chef for Thomas Keller's Per Se in
2004 and remained with the restaurant until 2005. Chef Shaeffer
then traveled to San Diego and opened the splashy 1500 Ocean
at the Hotel Del Coronado, a joint project with restaurant consultant
Clark Wolf and KSL Resorts. Jason received local and national
accolades from San Diego Magazine, Bon Appetit "Gnudi,
Dish of the Year 2006" and The Wall Street Journal.
Chef
Shaeffer is active in the community and has donated his services
for fundraisers such as Operation Frontline Colorado, Partners
Mentoring Youth and Sexually Assaulted Victims Advocacy Center
(SAVA). Shaeffer is a member of NoCO Active 20-30.
